HEALTHIER APPLE PIE CRUMB BARS
INGREDIENTS
Crust:
1 cup of oat flour
1 1/2 cups of almond flour
1/3 cup of melted coconut oil
1/4 cup of maple syrup
Filling:
3 large apples sliced very thinly
1-2 tbsp of cinnamon
1 tbsp of gluten-free flour
1/4 cup of coconut sugar
1 tsp of vanilla
Squeeze of half a lemon (optional)
Crumble:
1/2 cup of rolled oats
3 tsp of coconut sugar
1/4 cup of gluten-free flour
1/4 cup of coconut oil, room temperature
1 tbsp of cinnamon
DIRECTIONS
Preheat the Oven: Set your oven to 350°F (175°C). Line an 8x8 baking pan with parchment paper and set it aside.
Prepare the Crust: In a mixing bowl, combine all the crust ingredients. Mix thoroughly until the mixture resembles wet sand. Transfer this mixture into the prepared pan, spreading it evenly and pressing it down firmly. Set the crust aside.
Mix the Filling: In a large bowl, combine the apples with the filling ingredients. Use your hands to mix until the apples are well-coated. Set this mixture aside.
Make the Crumble: Using the same bowl from the crust (to save on dishes!), add all the crumble ingredients. Mix with your fingers until the coconut oil is evenly distributed throughout the mixture.
Assemble the Bars: Pour the apple filling onto the crust, spreading it out as evenly as possible. Then, sprinkle the crumble mixture evenly over the top.
Bake: Cover the pan with aluminum foil and bake for 30 minutes. After that, remove the foil and continue baking for an additional 30 minutes, or until the apples are fork-tender. You can check doneness by gently inserting a fork into the top layer.
