HEALTHY LEMON BARS
INGREDIENTS
Crust:
1 1/2 cups of almond flour
1 cup of oat flour
1/4 cup of maple syrup
1/3 cup of melted coconut oil
Lemon Layer:
4 eggs and 1 yolk
1/2 cup maple syrup or honey
Juice & zest of three large lemons
3 tbsp of coconut flour
DIRECTIONS
Preheat your oven to 350. Mix all your crust ingredients together & press into a 8x8 pan. Bake for 25 minutes. Whisk the lemon layer ingredients and set aside. Take your crust out and pour the lemon layer over the top. Bake for 20 minutes until set. Chill for two hours. Dust with powdered sugar and enjoy! Store in the fridge.
