PROTEIN PUMPKIN SPICE FRENCH TOAST BAKE

INGREDIENTS

  • 6-8 slices of thick bread cubed

  • 3 eggs

  • 1/4 cup of egg whites

  • 1/2 cup of cottage cheese

  • 1/2 cup of pumpkin puree

  • 1 tsp of vanilla extract

  • 1 tbsp of pumpkin pie spice

  • 1/2 cup of almond milk

DIRECTIONS

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish.

  2. Prepare Bread: Cube your bread and add it to your baking dish.

  3. Blend Ingredients: In a blender, add the eggs, egg whites, cottage cheese, pumpkin puree, vanilla extract, almond milk, pumpkin spice, and protein powder. Blend until smooth

  4. Combine Mixtures: Pour the wet mixture over the cubed bread, ensuring all pieces are coated.

  5. Bake: Cover with tin foil and bake for 20 minutes. Uncover and bake for 25 more minutes until the top is golden brown.

  6. Serve: Let cool slightly before slicing. Serve warm, drizzled with maple syrup or your favorite toppings.
