MEAL PREP: STRAWBERRY CHICKEN SALAD JARS

INGREDIENTS

  • 1 1/2 cups of shredded chicken

  • 1 1/2 cups of cooked and cooled quinoa

  • 3 handfuls of mixed greens

  • 5 mini cucumbers sliced

  • 1 cup of chopped strawberries

  • 1/3 cup of crumbled goat cheese

  • 1/3 cup of candied walnuts or nuts of choice

  • 1/2 of sliced red onion

  • Maple Balsamic Dressing (Recipe Link)

DIRECTIONS

  • Prepare your quinoa by following the package directions. Next, prepare your chicken. You can buy a rotto chicken which is way easier or just cook your chicken and shred it with a fork.

  • In 3 jars, add 2-3 tbsp of dressing to the bottom of your jars. Followed by your red onions, cucumbers, and strawberries.

  • Next add your quinoa, goat cheese, greens, and candied walnuts.

  • Store them in the fridge for up to four days and enjoy!
