CREAMY CAJUN CHICKEN AND RICE
INGREDIENTS
1 lb of chicken strips
1/2 of a large yellow onion chopped
1 red bell pepper chopped
3 cloves of minced garlic
2 tbsp of Cajun seasoning (✼ see notes)
1 cup of rice
2 cups of bone broth
1/4 cup of canned coconut milk
2 cups of spinach
1/2 cup of freshly grated parm
4 tbsp of olive oil
optional: Parmesan Rind
DIRECTIONS
In a large skillet over medium-high heat add 2 tbsp of olive oil. Add your chicken and 1 tbsp of your seasoning. Cook for 2 minutes on each side. You don’t want to cook your chicken all the way through. Remove from the pan.
Add 2 tbsp of olive oil, onion and bell pepper. Cook for 5-6 minutes until soft. Add your garlic and cook for another 2 minutes. Add the rest of your seasoning and rice. Give everything a good mix. Cook for a few minutes to get your rice a little toasty and coated in the seasoning.
Add your bone broth and mix. Nestle your chicken back in, bring it to a slight boil, cover it, and turn down the heat. Simmer for 20-25 minutes until your rice is done.
Just before your rice finishes, add your spinach and let it wilt down. Then add your coconut milk and parmesan cheese. Give everything one good last mix and enjoy!
RECIPE NOTES
✼ cajun seasoning: you can buy pre-made but you most likely have all the spices to make it yourself. I did 1 tsp smoked paprika, garlic powder, onion powder, dried thyme, and oregano. Plus, 1 tsp of cayenne pepper. If you want to spicer up the cayenne and smoked paprika.
