STRAWBERRY SHORTCAKE PROTEIN PANCAKES

INGREDIENTS

  • Batter:

    • 1/2 cup of egg whites

    • 1 banana

    • 1/2 tsp of baking soda

    • 1/2 tsp of baking powder

    • 1/2 tsp of vanilla

    • 1 serving of Vanilla Protein (I use @truvani)

    • 1/4 cup of GF or regular flour

  • Toppings:

    • 1 cup of chopped strawberries

    • 1 tsp of coconut sugar or regular

    • 1/2 cup of greek yogurt

DIRECTIONS

  • In a small bowl, mix your chopped strawberries and sugar. I like to mash some of them with a fork. Let sit for 30 minutes or make it the night before. This will turn into a juicy mixture.

  • Blend all your batter ingredients for 1 minute until super smooth. Cook your pancakes.

  • Once done, layer each pancake starting with greek yogurt and then the strawberries. This makes 4-6 pancakes!
