COPYCAT: EREWHON KALE SALAD

INGREDIENTS

  • Salad Base:

    • 1 bunch of kale

    • 3 cucumbers chopped

    • 1 can of white beans, drained and rinsed

    • ¼ cup of hemp seeds

    • ¼ cup of sunflower seeds

    • 2 avocados

    • 1 lb of shredded chicken or protein of choice!

  • Dressing:

    • ½ cup of olive oil

    • ¼ cup of lemon juice (about two large lemons)

    • 3 cloves of garlic

    • 2 tbsp of dijon mustard

    • 2 tbsp of maple syrup or honey

    • ½ tsp of salt

    • ½ tsp of pepper

DIRECTIONS

  • Prep all your ingredients for the salad. The most important step is chopping your kale up as finely as you can. Take 2 tbsp of the dressing and massage the shit out of it with your hands for a few minutes.

  • Use a blender or food processor to blend all your dressing ingredients until nice a creamy.

  • Mix everything up and enjoy!
