PROTEIN PEANUT BUTTER CHEESECAKE SQUARES

INGREDIENTS

  • Crust Layer:

    • 2 1/2 cups of dark chocolate granola

    • 1/4 cup of cocoa powder

    • 1/4 cup of maple syrup

    • 1/3 cup of melted coconut oil

  • Cheesecake Layer:

    • 16 oz of full-fat cottage cheese

    • 3 servings of peanut butter protein powder

    • 1/4 cup of maple syrup

    • 1/2 cup of peanut butter

    • 1-3 tbsp of almond milk

    • 1/4 cup of melted chocolate

DIRECTIONS

  • Use a food processor to blend your granola until it’s super fine.

  • Add all your crust ingredients into a bowl and mix until well combined. Evenly press your crust into an 8x8 pan lined with parchment paper. Set in the freezer while you make your filling

  • Add your cheesecake layer ingredients into a high-speed blender. Blend until super creamy. If you need to add 1-3 tbsp of milk to help it blend.

  • Evenly spread your cheesecake layer over your crust and put it back in the freezer for a couple of hours. Drizzle over your chocolate and enjoy!
