ARUGULA QUINOA SALAD WITH MAPLE CIDER DRESSING

INGREDIENTS

  • Salad Base:

    • 1 container of arugula

    • 1 cup of cooked quinoa

    • 1/4 cup of chopped almonds

    • 1/2 cup of crumbled goat cheese

    • 1/3 cup of chopped scallions

    • 1/3 cup of dried cranberries

  • Dressing:

    • 3/4 cup of olive oil

    • 1/4 cup of apple cider vinegar

    • 3 tbsp of maple syrup

    • 1 small shallot

    • 1 clove of garlic

    • 2 tbsp of Dijon or whole-grain mustard

    • salt and pepper to taste

DIRECTIONS

  • In a blender or food processor, add all your dressing ingredients and blend until super creamy. It should be a pale yellow color

  • Cook your quinoa according to the package and let cool

  • Assemble your salad and give everything a good mix.
