ARUGULA QUINOA SALAD WITH MAPLE CIDER DRESSING
INGREDIENTS
Salad Base:
1 container of arugula
1 cup of cooked quinoa
1/4 cup of chopped almonds
1/2 cup of crumbled goat cheese
1/3 cup of chopped scallions
1/3 cup of dried cranberries
Dressing:
3/4 cup of olive oil
1/4 cup of apple cider vinegar
3 tbsp of maple syrup
1 small shallot
1 clove of garlic
2 tbsp of Dijon or whole-grain mustard
salt and pepper to taste
DIRECTIONS
In a blender or food processor, add all your dressing ingredients and blend until super creamy. It should be a pale yellow color
Cook your quinoa according to the package and let cool
Assemble your salad and give everything a good mix.
