PEACH AND CRIPSY PROSCUITTO SALAD WITH HOT HONEY DRESSING

INGREDIENTS

  • Salad Base

    • 1 box of arugula 

    • 1 cup of cooked quinoa 

    • 8 spears of asparagus 

    • 8 slices of prosciutto 

    • 1 shallot 

    • 3 peaches 

    • ½ cup of goat cheese

  • Dressing: 

    • ⅓ cup of olive oil 

    • 3 tbsp of red wine vinegar 

    • 2-3 tbsp of hot honey 

    • 2 cloves of garlic 

    • Juice of 1 lemon 

    • ½ tsp salt and pepper


DIRECTIONS

  • Preheat your oven to 400 degrees. Line a baking sheet with parchment paper. Carefully lay your prosciutto on the tray. Bake for 8-10 minutes until crispy. Careful this can burn quickly

  • Cook your quinoa according to the package. 

  • Thinly slice your shallot. Thinly slice your asparagus on an angle (yes you can eat it raw haha) and thinly slice your peaches.

  • Add all your dressing ingredients into a blender and blend until very creamy and pale in color. 

  • Assemble your salad and enjoy!!!
