ARUGULA STRAWBERRY SALAD with MAPLE BALSAMIC DRESSING
INGREDIENTS
Salad Base:
1 container of arugula
1/2 of a red onion, thinly sliced
1 cup of sliced strawberries
1 English cucumber, thinly sliced
1/3 cup of crumbled goat cheese
1/3 cup of candied walnuts*
Maple Balsamic Dressing:
3/4 cup of olive oil
1/4 cup of balsamic vinegar
1/4 of maple syrup
juice of one lemon
1 tsp of salt and pepper
1/2 tsp of garlic powder or 2 gloves of garlic
DIRECTIONS
In a large salad bowl, combine the arugula, sliced red onion, sliced strawberries, sliced cucumber, crumbled goat cheese, and candied walnuts.
In a blender, add the olive oil, balsamic vinegar, maple syrup, lemon juice, salt, pepper, and garlic powder. Blend until super creamy.
***candied walnuts!! You can either buy these or make your own. If you want to make your own, add 1 tbsp of butter, 3 tbsp of sugar, and 1/3 cup of walnuts to a small saucepan. Cook on medium-low heat. Stir constantly until the butter and sugar are melted. It will start to turn a light golden brown color. This will take about 5 minutes. Spread out on parchment paper and let them cool completely.
