ARUGULA STRAWBERRY SALAD with MAPLE BALSAMIC DRESSING

INGREDIENTS

  • Salad Base:

    • 1 container of arugula

    • 1/2 of a red onion, thinly sliced

    • 1 cup of sliced strawberries

    • 1 English cucumber, thinly sliced

    • 1/3 cup of crumbled goat cheese

    • 1/3 cup of candied walnuts*

  • Maple Balsamic Dressing:

    • 3/4 cup of olive oil

    • 1/4 cup of balsamic vinegar

    • 1/4 of maple syrup

    • juice of one lemon

    • 1 tsp of salt and pepper

    • 1/2 tsp of garlic powder or 2 gloves of garlic

DIRECTIONS

  • In a large salad bowl, combine the arugula, sliced red onion, sliced strawberries, sliced cucumber, crumbled goat cheese, and candied walnuts.

  • In a blender, add the olive oil, balsamic vinegar, maple syrup, lemon juice, salt, pepper, and garlic powder. Blend until super creamy.

  • ***candied walnuts!! You can either buy these or make your own. If you want to make your own, add 1 tbsp of butter, 3 tbsp of sugar, and 1/3 cup of walnuts to a small saucepan. Cook on medium-low heat. Stir constantly until the butter and sugar are melted. It will start to turn a light golden brown color. This will take about 5 minutes. Spread out on parchment paper and let them cool completely.
