RASPBERRY CHOCOLATE CHIP PROTEIN MUFFINS (SMALL BATCH)

INGREDIENTS

  • 1 banana

  • 1/4 of maple syrup

  • 1/2 tsp of vanilla

  • 1 egg

  • 2 tbsp of nut butter

  • 1/4 cup of greek yogurt

  • 1/4 cup of gluten-free flour

  • 1/4 cup of vanilla protein powder

  • 1/2 tsp of baking powder

  • 1/4 tsp of baking soda

  • pinch of salt

  • 1/2 cup of raspberries

  • 1/3 cup of chocolate chips

DIRECTIONS

  • Preheat your oven to 350.

  • Mash your banana with a fork in a large bowl. Add the wet ingredients and whisk until well combined.

  • Fold in your dry ingredients. Then fold in your chocolate chips and raspberries. I like to smash a few of the raspberries while mixing gently

  • Scoop into your greased muffin tray. This will make about 8 muffins! Bake for 20-25 minutes until golden and a toothpick comes out clean!
