GNOCCHI, CHICKEN SAUSAGE, AND PESTO SHEET PAN MEAL

INGREDIENTS

  • 1 bag of frozen cauliflower gnocchi

  • 1 zucchini, sliced

  • 1 cup cherry tomatoes, halved

  • 1 pack of Bilinksi organic tomato, basil & mozzarella chicken sausages, sliced

  • 1/4 cup of onion, diced

  • 3 cloves of garlic, minced

  • 1/4 cup of pesto pesto

  • 1/4 cup marinara sauce (I like Rao’s)

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • Freshly grated parm cheese

  • Salt and pepper, to taste

  • Olive oil

DIRECTIONS

  • Preheat your oven to 400 degrees.

  • Add your chopped veggies, sausage, and gnocchi to your sheet pan. Drizzle with olive oil and add your seasonings. Add your pesto and marinara sauce.

  • Get in there with your hands and toss everything together until very well coated. Bake in the preheated oven for about 30-35 minutes or until the vegetables are roasted and the gnocchi is golden.

  • Top with shredded parm cheese and enjoy
