GNOCCHI, CHICKEN SAUSAGE, AND PESTO SHEET PAN MEAL
INGREDIENTS
1 bag of frozen cauliflower gnocchi
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 pack of Bilinksi organic tomato, basil & mozzarella chicken sausages, sliced
1/4 cup of onion, diced
3 cloves of garlic, minced
1/4 cup of pesto pesto
1/4 cup marinara sauce (I like Rao’s)
1 tsp garlic powder
1 tsp Italian seasoning
Freshly grated parm cheese
Salt and pepper, to taste
Olive oil
DIRECTIONS
Preheat your oven to 400 degrees.
Add your chopped veggies, sausage, and gnocchi to your sheet pan. Drizzle with olive oil and add your seasonings. Add your pesto and marinara sauce.
Get in there with your hands and toss everything together until very well coated. Bake in the preheated oven for about 30-35 minutes or until the vegetables are roasted and the gnocchi is golden.
Top with shredded parm cheese and enjoy
