EASY 15-MINUTE BLACKENED SHRIMP TACOS
INGREDIENTS
1lb of thawed and peeled shrimp
1 bag of shredded cabbage slaw mix (I used the one from trader joes)
1 cup of plain Greek yogurt
1 cup of roughly chopped cilantro
Tortillas of choice ( I LOVE the almond flour ones from trader joes)
4 limes
1 tbsp of chili powder
1 tbsp of cumin
2 tsp of garlic powder
2 tsp of onion powder
salt and pepper
Optional toppings: avocado & pickled red onion
DIRECTIONS
In a medium-sized bowl add your thawed shrimp, drizzle of olive oil, spices, and a little salt and pepper. Give it a good mix and set it aside in the fridge. If you want your shrimp extra blackened feel free to add 1 more tsp of each the chili powder and cumin. goo crazzzy.
In a small bowl, add your greek yogurt, cilantro, and juice from 2 limes. Give that a good mix until well combined. Set aside.
In a larger bowl, add your cabbage slaw, juice of 1 lime, and 1/2 of the greek yogurt mixture you just made. Give that a really good mix and set aside.
On medium heat cook your shrimp for 2-3 minutes on each side! These don’t take long at all. While your shrimp are cooking you can warm up your tortillas. If you have a gas stove you can heat them up right on the open flame. If not you can microwave them in a damp paper towel for 1-2 minutes.
Assemble your tacos and enjoy!
