EASY AND SIMPLE QUINOA ELOTE SALAD
INGREDIENTS
2 1/2 cups of cooked quinoa
1 bag of Trader Joe's roasted frozen corn, defrosted according to package
1 jalapeno, minced. Remove the seeds and white part for less spicy.
1/2 of a red onion, chopped
1/4 cup of scallions, chopped
1/2 cup of cilantro, chopped
1/2 cup of crumbled cotija cheese
1 tsp of chili powder
1 tsp of garlic powder
1 1/2 tsp of cumin
1 tsp of salt and pepper
1 /2 cup of plain greek yogurt
juice of two limes
DIRECTIONS
Prep and cook your quinoa and frozen corn according to the package.
While your quinoa is cooking, prep your salad ingredients.
Add the lime juice, yogurt, and spices to a large salad bowl. Whisk until combined.
Once your quinoa is done and slightly cooled, add the rest of your ingredients to the same bowl.
Give everything a good mix and enjoy!
