EASY AND SIMPLE QUINOA ELOTE SALAD

INGREDIENTS

  • 2 1/2 cups of cooked quinoa

  • 1 bag of Trader Joe's roasted frozen corn, defrosted according to package

  • 1 jalapeno, minced. Remove the seeds and white part for less spicy.

  • 1/2 of a red onion, chopped

  • 1/4 cup of scallions, chopped

  • 1/2 cup of cilantro, chopped

  • 1/2 cup of crumbled cotija cheese

  • 1 tsp of chili powder

  • 1 tsp of garlic powder

  • 1 1/2 tsp of cumin

  • 1 tsp of salt and pepper

  • 1 /2 cup of plain greek yogurt

  • juice of two limes

DIRECTIONS

  • Prep and cook your quinoa and frozen corn according to the package.

  • While your quinoa is cooking, prep your salad ingredients.

  • Add the lime juice, yogurt, and spices to a large salad bowl. Whisk until combined.

  • Once your quinoa is done and slightly cooled, add the rest of your ingredients to the same bowl.

  • Give everything a good mix and enjoy!
