VEGGIE AND BEAN SALAD

INGREDIENTS

  • 1 cup of purple cabbage

  • 1 cup of cucumbers

  • 1 cup of bell peppers

  • 1 cup of broccoli

  • 1 can of rinsed and drained chickpeas

  • 1 can of rinsed and drained white beans

  • 1 shallot, minced

  • 1/2 cup fresh herbs, finely chopped ( I used basil, mint, & parsley)

  • 1/2 cup of olive oil

  • 1/3 cup of red wine vinegar

  • 2 tbsp of honey

  • 1 tsp of salt and pepper

DIRECTIONS

  • Prepare all your veggies by finely chopping them into about 1/8-inch pieces. Add them all to a large bowl.

  • In a small bowl combine your shallot, fresh herbs, oil, vinegar, honey, and salt and pepper. Whisk well. Pour over your veggies and give everything a good mix. Feel free to season with more salt and pepper to your liking!
