VEGGIE AND BEAN SALAD
INGREDIENTS
1 cup of purple cabbage
1 cup of cucumbers
1 cup of bell peppers
1 cup of broccoli
1 can of rinsed and drained chickpeas
1 can of rinsed and drained white beans
1 shallot, minced
1/2 cup fresh herbs, finely chopped ( I used basil, mint, & parsley)
1/2 cup of olive oil
1/3 cup of red wine vinegar
2 tbsp of honey
1 tsp of salt and pepper
DIRECTIONS
Prepare all your veggies by finely chopping them into about 1/8-inch pieces. Add them all to a large bowl.
In a small bowl combine your shallot, fresh herbs, oil, vinegar, honey, and salt and pepper. Whisk well. Pour over your veggies and give everything a good mix. Feel free to season with more salt and pepper to your liking!
