PROTEIN LEMON POPPY SEED LOAF
INGREDIENTS
- 1 cup of gluten-free flour 
- 1/2 cup of vanilla protein powder ( I use Truvani) 
- 1 tsp of baking powder 
- 1/4 tsp of salt 
- 1/2 cup of nonfat plain Greek yogurt 
- 1/2 cup of honey or maple syrup 
- 1/4 cup of melted coconut oil 
- 3 large eggs 
- Zest of 2 lemons 
- Juice of 1 lemon 
- 2 tbsp of poppy seeds 
- Optional topping: Greek yogurt and extra lemon zest 
DIRECTIONS
- Preheat your oven to 350 and line a loaf pan with parchment paper. 
- In a large mixing bowl, mix all your wet ingredients. In a smaller bowl, mix all your dry ingredients. 
- Add your dry ingredients into your wet and mix until combined. Add your poppy seeds and mix. 
- Pour your batter into the pan and bake for 35-45 minutes until a toothpick comes out clean. 
- I topped mine with Greek yogurt and a little more lemon zest.
