PROTEIN LEMON POPPY SEED LOAF
INGREDIENTS
1 cup of gluten-free flour
1/2 cup of vanilla protein powder ( I use Truvani)
1 tsp of baking powder
1/4 tsp of salt
1/2 cup of nonfat plain Greek yogurt
1/2 cup of honey or maple syrup
1/4 cup of melted coconut oil
3 large eggs
Zest of 2 lemons
Juice of 1 lemon
2 tbsp of poppy seeds
Optional topping: Greek yogurt and extra lemon zest
DIRECTIONS
Preheat your oven to 350 and line a loaf pan with parchment paper.
In a large mixing bowl, mix all your wet ingredients. In a smaller bowl, mix all your dry ingredients.
Add your dry ingredients into your wet and mix until combined. Add your poppy seeds and mix.
Pour your batter into the pan and bake for 35-45 minutes until a toothpick comes out clean.
I topped mine with Greek yogurt and a little more lemon zest.
