PROTEIN LEMON POPPY SEED LOAF

INGREDIENTS

  • 1 cup of gluten-free flour

  • 1/2 cup of vanilla protein powder ( I use Truvani) 

  • 1 tsp of baking powder

  • 1/4 tsp of salt

  • 1/2 cup of nonfat plain Greek yogurt 

  • 1/2 cup of honey or maple syrup

  • 1/4 cup of melted coconut oil

  • 3 large eggs

  • Zest of 2 lemons

  • Juice of 1 lemon

  • 2 tbsp of poppy seeds 

  • Optional topping: Greek yogurt and extra lemon zest

DIRECTIONS

  • Preheat your oven to 350 and line a loaf pan with parchment paper. 

  • In a large mixing bowl, mix all your wet ingredients. In a smaller bowl, mix all your dry ingredients. 

  • Add your dry ingredients into your wet and mix until combined. Add your poppy seeds and mix. 

  • Pour your batter into the pan and bake for 35-45 minutes until a toothpick comes out clean. 

  • I topped mine with Greek yogurt and a little more lemon zest.
