SINGLE SERVE: SALMON AND VEGGIE SHEET PAN

INGREDIENTS

  • 1 piece of wild-caught salmon

  • ¼  cup of zucchini

  • ¼ cup of summer squash 

  • ¼ cup of red bell pepper 

  • ¼ cup of broccoli 

  • 1/2 tsp chili powder 

  • 1/2 tsp of smoked paprika

  • 1/2 tsp garlic powder

  • olive oil, salt & pepper 

DIRECTIONS

Directions: 

  1. Preheat your oven to 400 degrees. Line a sheet tray with parchment paper. 

  2. Chop your veggies into small 1/4-inch pieces. Coat them in olive oil and half the seasonings. With the rest of your seasonings coat the salmon well. 

  3. Place everything on the baking tray, and bake for 15-20 minutes until your salmon is cooked through. 

  4. Serve it up with quinoa, a sprinkle of feta cheese, and a squeeze of lemon
