PROTEIN CHIPOTLE PASTA SALAD

INGREDIENTS

  • 1 box of chickpea pasta 

  • 1 chopped bell pepper

  • 1/2 of a cucumber, chopped

  • 1/2 of a red onion, chopped

  • 1/2 cup of sliced cherry tomatoes

  • handful of cilantro roughly chopped 

  • 1 can of black beans & corn, rinsed and drained

  • Dressing: 

    • 1/4 cup of olive oil 

    • 1/4 cup of red wine vinegar 

    • *1/3 cup of plain greek yogurt 

    • juice of 1 lemon 

    • 2 chipotle peppers in adobo sauce plus 2 tbsp of the liquid 

    • 2 tbsp of honey

    • Salt and pepper to taste


DIRECTIONS

  • Cook your pasta according to the box instructions.

  • Chop up all your vegetables and prep your canned goods. 

  • Use a blender or food processor to make your dressing and blend until creamy! 

  • Add all your ingredients to a bowl. Mix until well combined. 

  • The dressing makes about a cup, so you can save the rest in your fridge!
