PROTEIN CHIPOTLE PASTA SALAD
INGREDIENTS
1 box of chickpea pasta
1 chopped bell pepper
1/2 of a cucumber, chopped
1/2 of a red onion, chopped
1/2 cup of sliced cherry tomatoes
handful of cilantro roughly chopped
1 can of black beans & corn, rinsed and drained
Dressing:
1/4 cup of olive oil
1/4 cup of red wine vinegar
*1/3 cup of plain greek yogurt
juice of 1 lemon
2 chipotle peppers in adobo sauce plus 2 tbsp of the liquid
2 tbsp of honey
Salt and pepper to taste
DIRECTIONS
Cook your pasta according to the box instructions.
Chop up all your vegetables and prep your canned goods.
Use a blender or food processor to make your dressing and blend until creamy!
Add all your ingredients to a bowl. Mix until well combined.
The dressing makes about a cup, so you can save the rest in your fridge!
