GREEK-INSPIRED CHICKEN BOWLS (MEAL PREP)

helllo meal prep! Recently my roommate and I have been trying to save money on food so I decided to start meal prepping one meal that we can quickly throw together while we are WFH, that is healthy and stays great in the fridge. I decided to go with these Greek-inspired chicken bowls that are super satisfying and the entire meal prep comes together in just an hour. To be honest, I didn’t measure, but below are my estimates and step-by-step instructions on how to make this insanely good meal prep. This made about 2-3 servings for 2 people!

INGREDIENTS

  • Chicken & Marinade

    • 4-5 chicken breasts sliced in half lengthwise

    • 4 cloves of garlic, minced (you can use 2 tbsp of garlic powder)

    • 1 tsp of sweet or smoked paprika

    • 1 tbsp of fresh thyme leaves

    • 2 tbsp of fresh parsley chopped

    • 2 tbsp of fresh dill chopped

    • 1/3 cup of olive oil

    • 1 lemon, zest and juiced

    • 1 tsp of salt and pepper

  • Pickled Red Onions

    • 1 thinly sliced red onion

    • 1/2 cup of apple cider vinegar

    • 1 tbsp of sugar or honey

    • 2 tbsp of salt

    • 1/2 cup of water

    • 1 tbsp of peppercorns (optional)

  • Cucumber, Tomato, Feta Salad

    • 5 mini cucumbers sliced

    • 1 cup of cherry tomatoes cut in half

    • 1 6 oz container of crumbled feta (or more hehe)

    • 1 can of rinsed and drained chickpeas

    • 1/3 cup of black olives chopped

    • 1/4 cup of red wine vinegar

    • 1/4 cup of olive oil

    • 1 tsp of salt and pepper

  • Tzatziki

    • 1 cup of plain Greek yogurt

    • 1 cucumber shredded

    • 4 cloves of fresh garlic minced

    • salt and pepper (measure with your heart here)

    • 1/2 cup of freshly chopped dill (measure with your heart here)

    • drizzle of olive oil

  • Extra Prep for Bowls

    • 1 cup of quinoa, rinsed & cooked to package directions.

    • Romaine Lettuce Chopped

DIRECTIONS

  • STEP 1: CHICKEN & MARINADE

    • In a large bowl, add your sliced chicken and marinade ingredients. Give everything a good mix, cover it, and set it in the fridge for later.

  • STEP 2: PICKLED RED ONIONS

    • In a 12 oz mason jar, shove in your thinly sliced red onions. It’s okay if it’s jam-packed. In a small bowl add your vinegar, water, salt, sugar, and peppercorns. Give everything a good mix until the sugar and salt are mostly dissolved. Pour into your mason jar, lid it, and leave it on the counter.

  • STEP 3: COOK YOUR QUIONA ACCORDING TO THE PACKAGE :)

  • STEP 4: CUCUMBER, FETA, TOMATO SALAD

    • Chop and prep all your veggies. Add them to a large Tupperware container along with your feta. Add your vinegar, olive oil, salt pepper, and dill. Give everything a good mix and set it in the fridge.

  • STEP 5: TZATIKI

    • Shred your cucumber with a cheese grater. Once done wrap it in a few layers of paper towel and squeeze out the extra liquid. In a tupper container, add your yogurt, cucumber, and the rest of your ingredients to the bowl. Give everything a good mix and set it in the fridge.

  • STEP 6: COOK & SHRED THE CHICKEN

    • On medium heat, cook your chicken for about 10 minutes flipping halfway or until the internal temperature reaches 165. Once all your chicken is done, in a stand mixer or using an electric mixer shred your chicken. This is the best hack to get quick shredded chicken.
