SALT AND VINEGAR ROASTED SWEET POTATOES
INGREDIENTS
2 large sweet potatoes
1 - 2 tbsp of flaky salt
3 tbsp of good olive oil
1 tbsp of apple cider or white vinegar
DIRECTIONS
Preheat your oven to 425 degrees.
Slice your sweet potatoes into 1/4-inch slices. Boil your sweet potatoes until you can easily stick a fork in them.
Place them in a bowl with ice and water to stop the cooking. Gently pat them dry with a paper towel.
Heavily coat a baking tray with olive oil and align your sweet potatoes on a tray. Take a glass and gently smash your potatoes.
Bake for 20 minutes, flip and bake for 10 more minutes until crispy.
Brush with apple cider vinegar and sprinkle with flaky salt.
