VEGGIE, CHICKEN SAUSAGE AND CHICKPEA, SHEET PAN

INGREDIENTS

  • 1 pack of Bilinksi organic lemon herb chicken sausage

  • 1 zucchini, chopped

  • 1 orange bell pepper, sliced

  • 1/2 of a red onion, sliced

  • 1 can of chickpeas, rinsed and drained

  • Olive oil

  • Salt and pepper to taste

  • 1 tbsp of garlic powder

  • 1 tbsp dry dill

  • 1 tbsp oregano

  • Toppings:

    • ¼ cup feta cheese

    • ¼ cup chopped fresh dill

    • Optional: serve with tzatziki and hummus! This would also be good over orzo pasta or quinoa!

DIRECTIONS

  • Preheat your oven to 375.

  • Add all your veggies and sausage to the pan and coat with olive oil. Add your seasonings. Get in there with your hands and mix everything very well.

  • Bake for 25-30 minutes. Toss and turn your oven up to 400 and bake for 5-10 more minutes until everything gets nice and golden.

  • Top with feta cheese and fresh dill
