VEGGIE, CHICKEN SAUSAGE AND CHICKPEA, SHEET PAN
INGREDIENTS
1 pack of Bilinksi organic lemon herb chicken sausage
1 zucchini, chopped
1 orange bell pepper, sliced
1/2 of a red onion, sliced
1 can of chickpeas, rinsed and drained
Olive oil
Salt and pepper to taste
1 tbsp of garlic powder
1 tbsp dry dill
1 tbsp oregano
Toppings:
¼ cup feta cheese
¼ cup chopped fresh dill
Optional: serve with tzatziki and hummus! This would also be good over orzo pasta or quinoa!
DIRECTIONS
Preheat your oven to 375.
Add all your veggies and sausage to the pan and coat with olive oil. Add your seasonings. Get in there with your hands and mix everything very well.
Bake for 25-30 minutes. Toss and turn your oven up to 400 and bake for 5-10 more minutes until everything gets nice and golden.
Top with feta cheese and fresh dill
