COFFEE CAKE PROTEIN LOAF

INGREDIENTS

  • Batter:

    • 1 cup gf flour

    • 1/2 cup of Truvani vanilla chai protein powder

    • 1/2 cup of almond flour

    • 1 tsp baking powder

    • 1/2 tsp baking soda

    • 1/2 cup of plain Greek yogurt *sub applesauce for dairy-free.

    • 1/4 cup melted coconut oil

    • 1/2 cup maple syrup

    • 1 tsp vanilla extract

    • 1 cup of chilled coffee

  • Filling:

    • 3 tbsp of brown sugar or coconut sugar

    • 1 tbsp cinnamon

    • Crumb Topping:

    • 4 tbsp of room temp butter or coconut oil

    • 1/4 cup of oats

    • 1/2 a scoop of Truvani vanilla chai protein

    • 3 tbsp brown sugar or coconut sugar

  • Glaze:

    • 1/3 cup plain Greek yogurt

    • 1/3 cup maple syrup

DIRECTIONS

  • Preheat your oven to 350 degrees.

  • In two separate bowls, mix your wet ingredients and sift your dry ingredients. 

  • Add your wet into your dry ingredients, and give it a mix until just combined. 

  • In a little bowl mix together your filling ingredients. In another bowl mix your topping ingredients, it should be a crumbly mixture. 

  • In a lined loaf pan, add half your batter, then sprinkle the filling mixture evenly. Add the rest of your batter and smooth out the top. 

  • Crumble your topping evenly over the top and bake for 35-45 minutes until a toothpick comes out clean. Let cool and drizzle over your glaze
