COFFEE CAKE PROTEIN LOAF
INGREDIENTS
Batter:
1 cup gf flour
1/2 cup of Truvani vanilla chai protein powder
1/2 cup of almond flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup of plain Greek yogurt *sub applesauce for dairy-free.
1/4 cup melted coconut oil
1/2 cup maple syrup
1 tsp vanilla extract
1 cup of chilled coffee
Filling:
3 tbsp of brown sugar or coconut sugar
1 tbsp cinnamon
Crumb Topping:
4 tbsp of room temp butter or coconut oil
1/4 cup of oats
1/2 a scoop of Truvani vanilla chai protein
3 tbsp brown sugar or coconut sugar
Glaze:
1/3 cup plain Greek yogurt
1/3 cup maple syrup
DIRECTIONS
Preheat your oven to 350 degrees.
In two separate bowls, mix your wet ingredients and sift your dry ingredients.
Add your wet into your dry ingredients, and give it a mix until just combined.
In a little bowl mix together your filling ingredients. In another bowl mix your topping ingredients, it should be a crumbly mixture.
In a lined loaf pan, add half your batter, then sprinkle the filling mixture evenly. Add the rest of your batter and smooth out the top.
Crumble your topping evenly over the top and bake for 35-45 minutes until a toothpick comes out clean. Let cool and drizzle over your glaze
